Easy Lychee Watermelon Mocktail

This lychee watermelon mocktail is a delicious, refreshing and tropical-inspired drink and a fantastic alcohol-free treat.

Ingredients

  • 6 cups watermelon
  • 2 cups lychee juice / litchi juice (alternatively use canned lychees with their canning juice)
  • ½ cup fresh basil leaves
  • 1-2 tbsp fresh lemon juice

Instructions

  1. Cube and freeze watermelon in freezer bags for at least 6 hours.
  2. Blend the watermelon with lychee juice or canned lychees (along with their syrup), a handful of fresh basil and a generous squeeze of lemon juice.
  3. Blend until smooth then pour into serving glasses and serve.
  4. If you're prefer to have no pulp in the mocktail, simply strain before serving.
