Easy Mediterranean Pasta With Chicken Sausage (One-Pan Meal!)

Ingredients
- 1 lb chicken sausage sliced
- 1 small onion diced
- 4-5 garlic cloves minced
- 8 oz mushrooms sliced
- ½ cup sun-dried tomatoes chopped
- 12 oz uncooked whole wheat pasta
- 3 cups chicken broth
- ½ cup crumbled Feta cheese divided
- 2 cups baby spinach
- red pepper flakes optional, for a bit of heat
Instructions
- In a large skillet or pan, heat some olive oil over medium heat. Add the sliced chicken sausage and cook until browned and cooked through, about 3-4 minutes
- Add the diced onion and garlic to the pan. Cook for a couple of minutes until the onion is translucent and fragrant.
- Stir in the sun-dried tomatoes, mushrooms and 1/4 cup of feta cheese. Cook for another 3-4 minutes until the mushrooms are softened.
- Add the uncooked pasta to the pan, followed by the chicken broth. Bring to a boil, the reduced the heat to low and cover. Let the pasta cook for about 10-12 minutes or until al dente, stirring occasionally.
- Once the pasta is almost cooked, stir in the baby spinach until wilted. Season with salt, pepper, and red pepper flakes if using.
- Sprinkle the remaining crumbled feta cheese on top of the pasta and let it melt slightly. Give everything a good stir to combine. Serve immediately.
