Easy Mediterranean Pasta With Chicken Sausage (One-Pan Meal!)

One-pan easy mediterranean pasta is a busy weeknight dream come true. Packed with savory chicken sausage, mushrooms, sweet sun-dried tomatoes, fresh spinach, and creamy feta cheese. This dish is a true crowd-pleaser!

Ingredients

  • 1 lb chicken sausage sliced
  • 1 small onion diced
  • 4-5 garlic cloves minced
  • 8 oz mushrooms sliced
  • ½ cup sun-dried tomatoes chopped
  • 12 oz uncooked whole wheat pasta
  • 3 cups chicken broth
  • ½ cup crumbled Feta cheese divided
  • 2 cups baby spinach
  • red pepper flakes optional, for a bit of heat

Instructions

  1. In a large skillet or pan, heat some olive oil over medium heat. Add the sliced chicken sausage and cook until browned and cooked through, about 3-4 minutes
  2. Add the diced onion and garlic to the pan. Cook for a couple of minutes until the onion is translucent and fragrant.
  3. Stir in the sun-dried tomatoes, mushrooms and 1/4 cup of feta cheese. Cook for another 3-4 minutes until the mushrooms are softened.
  4. Add the uncooked pasta to the pan, followed by the chicken broth. Bring to a boil, the reduced the heat to low and cover. Let the pasta cook for about 10-12 minutes or until al dente, stirring occasionally.
  5. Once the pasta is almost cooked, stir in the baby spinach until wilted. Season with salt, pepper, and red pepper flakes if using.
  6. Sprinkle the remaining crumbled feta cheese on top of the pasta and let it melt slightly. Give everything a good stir to combine. Serve immediately.
