Easy Mexican Appetizer Black Bean Salad Recipe

Ingredients

  • 2 cans black beans
  • 2 ½ cups corn kernels
  • 2 red bell peppers diced
  • 2 teaspoons minced garlic 
  • 2 tablespoons minced shallots
  • salt and pepper to taste
  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • 6 tablespoons fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • 2 avocados chopped

Instructions

  1. Rinse and drain canned black beans.
  2. In a large bowl, mix together all ingredients except for chopped avocado.
  3. Mix well. Cover with plastic wrap and chill for 2 hours or overnight.
  4. Add avocados before serving. Mix gently.
