These Easy No Bake Chocolate Oatmeal Cookies combine cocoa, sugar, and butter cooked briefly, then mixed with oats, nut butter, and vanilla to create rich, chocolatey mounds that set without baking. The texture is chewy and firm once cooled, making them a quick, convenient sweet treat requiring no oven time.
Ingredients
- 3/4 cup granulated sugar
- 1/4 cup milk
- 1/4 cup butter unsalted
- 3 tablespoons cocoa powder unsweetened
- salt pinch
- 1 1/2 cups oats quick cooking
- 1/3 cup nut butter (peanut, almond, cashew)
- 1 teaspoon vanilla extract pure
Instructions
- Line a baking sheet with parchment paper.
- In a medium saucepan set over medium heat, combine sugar, milk, butter, cocoa and salt. Bring to a full boil, stirring frequently, and cook for 1 full minute.
- Remove from heat, and stir in oats, nut butter, and vanilla.
- Drop 2 tablespoonful-sized mounds of dough onto prepared baking sheet. Let cool at room temperature until hardened, about 30 minutes.
- Store leftover cookies in an airtight container in the refrigerator for 3 to 4 days.
