Easy One Pot Beef Stroganoff

This made-from-scratch Beef Stroganoff recipe is so easy to make, it only requires one pot and 40 minutes to prepare, for one delicious dinner!

Ingredients

  • 2 tbsp butter
  • 8 oz baby bella mushrooms sliced
  • 1 cup onion diced
  • 3 cloves garlic minced
  • 1 lb ground beef
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 cups beef broth
  • 1 cup half-and-half
  • 2 cups macaroni noodles or cavatappi noodles
  • ½ cup sour cream
  • ¼ cup Parmesan Cheese grated
  • 2 tbsp fresh parsley chopped

Instructions

  1. Add the butter to a large pan over medium high heat.
  2. Once melted, add the mushrooms and onion.
  3. Saute 5-6 minutes, then add the garlic and saute for an additional minute.
  4. Add the ground beef and cook through, 6-8 minutes.
  5. Drain any grease from the beef, then add the salt, pepper and paprika to the pan.
  6. Pour the beef broth and half-and-half into the pan, then add the noodles.
  7. Stir everything to combine.
  8. Reduce the heat to low, cover and cook for 20-25 minutes.
  9. Remove the lid and stir in the sour cream.
  10. Top with the parmesan cheese and parsley before serving.
