Easy Oven Baked Shrimp Recipe
Baked shrimp are a hands-off dinner that's ready in just 15 minutes. I toss the shrimp in a marinade made with healthy ingredients such as olive oil, lemon juice, garlic and spices. The result are juicy shrimp in a tasty sauce that goes well with everything!
Ingredients
- 10 oz Shrimp peeled, uncooked and thawed if previously frozen (300g or 24 large shrimp), or 1 lb / 450g peeled raw shrimp with tails on, large
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
Spices
- ½ teaspoon garlic powder or 3 cloves garlic, minced
- ½ teaspoon smoked paprika
- 1 teaspoon oregano dried
- ½ - 1 teaspoon salt to taste, sea salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes or pinch of cayenne, scale up or down depending on heat preference
To Serve
- 2 tablespoon parsley chopped
- lemon wedges
Instructions
- Preheat the oven to 400F / 200C.
- Toss the shrimp in a large mixing bowl with the olive oil, lemon juice and spices until they are well coated all over. NOTE - If using raw garlic, sauté the garlic in the olive oil for 1 minute until soft first.
- Arrange the shrimp in a single layer in a baking dish.
- Bake the shrimp in the oven on the middle shelf for 8-10 minutes, without turning, until just cooked through. They should be opaque and pink. Cooking times vary depending on the size of the shrimp. Take care not to overcook or they will become rubbery.
- Remove the baked shrimp from the oven and garnish with chopped parsley. Serve with lemon wedges.
Notes
- Serves 2 (I used 24 large shrimp). 1.5g net carbs per serving.
- Serve with cauliflower rice and a crisp green salad, green beans or broccoli for low carb. Or, pair with rice, pasta or bread.
- Store leftovers in the fridge for 2 days or in the freezer for 2 months.
