Ingredients

  • 1 pound Shiitake mushrooms
  • 2 teaspoons vegetable oil
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 2 teaspoon soy sauce
  • salt and pepper to taste
  • optional parsley for garnish

Instructions

    Cup of Yum
  1. Wash the mushrooms and remove the stems.
  2. Cut the large mushrooms in half and keep the smaller mushrooms whole so that they are all relatively the same size.
  3. Add oil to a large skillet over medium-high heat. Once hot, add the shiitake mushrooms in a single layer.
  4. Cook for 3-4 minutes, stirring occastionaly.
  5. Drain the liquid. This will give you a concentrated mushroom umami flavor. Removing the liquid is key to getting a golden-brown sear.
  6. Add butter, garlic, soy sauce, salt and pepper to the skillet.
  7. Continue to sauté for about 3 minutes.
  8. Turn off the heat. Garnish with optional chopped parsley. Serve and enjoy!

Notes

  • If there's not much liquid after sauteeing, it means that your shiitake mushroom is not as fresh. It's safe to eat and can still be delicious.
