Easy Pappardelle Pasta Recipe

Pappardelle is a wide-shaped pasta that is often featured in Italian restaurants. It pairs well with rich sauces and gives dishes a beautiful presentation.

Ingredients

  • 1 lb. pappardelle pasta
  • 1 tablespoon olive oil
  • 5 Italian sausages
  • 1 red onion sliced
  • 2 garlic cloves
  • 4 bell peppers sliced
  • 28 oz. canned tomatoes
  • salt & pepper to taste
  • optional basil for garnish

Instructions

  1. Heat a large skillet to medium-high heat.
  2. Add the olive oil and Italian sausage and cook for 3-4 minutes until the sausage is browned on all sides. Remove from the pan and set aside.
  3. In the same pan, immediately add the red onions. Stir and sauté for 4-5 minutes until lightly caramelized.
  4. Add the garlic and mini bell peppers, and sauté for 2-3 minutes. Season with a pinch of salt and pepper.
  5. Stir in the crushed tomatoes and simmer for 8-10 minutes.
  6. Bring a large pot of water to a boil. Add the pappardelle and cook stirring gently until al dente, about 11-13 minutes.
  7. Drain the pasta and place in a large bowl.
  8. Slice the Italian sausage into bite-sized pieces and add to the tomato sauce. Toss together the sauce, sausages, and pappardelle until combined.
  9. Garnish with fresh basil and serve with shaved parmesan cheese.
