Easy Peach Cobbler for Two

This Easy Peach Cobbler for Two brings together a simple baking mix batter and a sweet peach filling flavored with vanilla, almond, and warming spices. The topping bakes golden and bubbly, covering the soft, fruity peaches, creating a warm dessert sized just right for a small serving or couple. The mixture of baked fruit and tender crust yields a comforting, soft-textured treat that can be enhanced with ice cream if desired.

Ingredients

  • ½ Cup baking mix Bisquick
  • ½ Cup milk
  • ¼ teaspoon nutmeg
  • ¼ cup butter melted
  • ½ cup sugar
  • 1 15.9 oz peaches drained, canned, sliced
  • ½ teaspoon vanilla extract real
  • ¼ teaspoon almond extract real
  • ½ teaspoon cinnamon

Instructions

    Cup of Yum
  1. Preheat the oven to 375.
  2. Stir together the baking mix, milk and nutmeg in a medium sized bowl then add the melted butter and mix some more. Use a 1 quart baking dish if making this dish for two people. Upgrade to a 9x9 pan if doubling to make for 4-6.
  3. In a separate medium sized bowl, mix together the sugar, drained peaches, vanilla, almond and cinnamon. Mix well.
  4. Pour the peach mixture on top of the batter mixture that you already put in the bottom of the 1 quart baking dish.
  5. Bake at 375 for 40 minutes (if you double the recipe - bake a little longer). Its done when it is golden brown and bubbly and smelling like PURE heaven! Serve warm. Allow it to sit for a minute because it is like hot lava when it comes out of the oven

Notes

  • The recipe calls for higher sugar than usual in this smaller size for optimal flavor; reducing it noticeably changes the result.
  • Use real vanilla and almond extracts rather than imitation for best flavor impact.
  • For larger servings, double the recipe and bake a bit longer, or divide into ramekins and shorten baking times as needed.
  • Allow the cobbler to cool slightly after baking to prevent burns from the hot filling.
  • Serving with good-quality vanilla ice cream enhances the dessert experience.
  • Small 1-quart baking dishes are an ideal size for this recipe when cooking for one or two.
