Easy Pesto

This easy pesto recipe is the perfect way enjoy fresh basil. It's so quick to whip up (with just 6 ingredients) and tastes so much better than store-bought pesto.

Ingredients

  • 2 cups basil leaves loosely packed, fresh
  • 2 garlic small cloves
  • ¼ cup pine nuts
  • ⅔ cup Parmigiano-Reggiano cheese parmesan works too, fresh grated
  • ½ cup extra virgin olive oil
  • 2 Tablespoons lemon juice fresh
  • ½ teaspoon salt more to taste, sea salt
  • Pinch ground black pepper more to taste

Instructions

  1. Add basil, garlic, pine nuts and grated parmesan, lemon juice, salt and pepper into a food processor and pulse until coarsely chopped.
  2. Add oil and process until fully incorporated and smooth. Taste and adjust seasoning if needed.
  3. Store in an air-tight container in the fridge for up to 1 week or in the freezer for up to 3 months.
