Easy Pesto Mozzarella Stuffed Chicken (Only 5 Ingredients!)

This easy one pan pesto and mozzarella dish is blistered cherry tomatoes in a cheesy pesto sauce stuffed into the juiciest tender chicken breasts. It’s only 5 ingredients and comes out perfect every time!

Ingredients

  • 2 chicken breasts
  • ¼ cup pesto homemade or store-bought works great for this recipe
  • 16 oz sliced mozzarella cheese
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 420 degrees and prepare chicken; using a sharp knife create 5-6 slits in the chicken breasts widthwise about 1″ apart. Cut almost all the way through, leaving the bottom surface connected.
  2. Rub pesto all over chicken including inside the formed slits.
  3. Place a slice of mozzarella into each of the slits in the chicken.
  4. Into a baking dish, place the cherry tomatoes or other vegetables (if using) and drizzle over the olive oil. Place the chicken on top a cook for 20-25 minutes at 420 degrees. Turn on broiler for an additional 2-3 minutes, optional.
