Ingredients
- 1 pound boneless pork loin roast cut into thin strips
- 1 green bell pepper cut into thin strips
- 3/4 cup salsa
- 4 flour tortillas (8-10 inches)
- 1 cup cheddar cheese shredded
- 1/2 cup sour cream optional
- 1/4 cup Freshly chopped cilantro optional
Instructions
- Spray a nonstick skillet with cooking spray.
- Heat the skillet over medium-high heat.
- Add the pork and pepper strips.
- Cook for 3-4 minutes until pork is lightly browned.
- Add the salsa and heat through.
- Wrap the tortillas in paper towels and microwave on high for 30 seconds to warm them.
- Spoon the pork mixture into the warmed tortillas.
- Top with cheese, sour cream and fresh cilantro, if desired.
- Serve with additional salsa.
