Easy Pumpkin Butter

Sweet & savory, this easy pumpkin butter is perfect on toast, muffins, or fresh buns with dinner!

Ingredients

  • 28 ounces pumpkin puree canned or fresh
  • ½ cup apple juice
  • ½ cup granulated sugar or maple syrup, or to taste
  • ¼ cup water
  • 1 teaspoon pumpkin pie spice or spices below
  • ½ teaspoon ground ginger

Instructions

    Cup of Yum
  1. Combine all ingredients in a medium saucepan.
  2. Simmer on low, stirring frequently, 25-30 minutes or until thickened.
  3. Cool and refrigerate up to 2 weeks.

Notes

  • If you do not have pumpkin pie spice, combine the following to make your own.1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, 1/8 teaspoon allspice, 1/8 teaspoon ground cloves
  • Fresh pumpkin puree may need extra cook time depending on how much water is in the pumpkin.
  • Store in a jar in the fridge for up to 2 weeks.
