Easy Pumpkin Muffin Recipe

Ingredients

  • 4 large eggs
  • 1 2/3 cup sugar
  • 1 1/2 cups pumpkin puree
  • 1/2 cup canola oil
  • 1/2 cup apple cider
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp kosher salt
Glaze
  • 1 cup powdered sugar
  • 2 tbsp apple cider

  1. Preheat oven to 350 degrees. Fill two muffin pans with cupcake liners. If you don't have muffin liners you can spray the tin VERY well with non-stick cooking spray.
  2. In a large bowl, whisk together eggs, sugar, pumpkin, oil and apple cider until combined very well. Add in flour, baking powder, baking soda, cinnamon and salt. Stir just until combined. It's okay if there are a few lumps.
  3. Fill cupcake liners ¾ of the way full. Bake for 16-18 minutes or until a toothpick comes out with a few moist crumbs attached to it when inserted into the center of the muffins. Let cool completely and then drizzle with glaze.
For the glaze

  1. Whisk powdered sugar and apple cider together until smooth. If it's too thick, add more cider. Too thin, add more powdered sugar.
