Ingredients

  • 3 pounds purple potatoes quartered or sliced
  • 1 tablespoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Scrub and rinse the potatoes then pat them dry. Cut the potatoes into quarters or evenly sized pieces and place into a bowl.
  3. In a separate large bowl, mix together the garlic powder, paprika, olive oil, salt and pepper until evenly blended and free of lumps. Add the potatoes and toss well.
  4. Transfer to a baking sheet and cook for 25 minutes, or until the outside of the potatoes are nicely browned.
