Ingredients

Cake
  • 2 .25 ounce white cake mixes
  • 6 egg whites
  • 1 cup vegetable oil
  • 2 cups water
  • Red and blue food coloring
  • Maraschino cherries (optional garnish)
  • patriotic sprinkles (optional garnish)
Buttercream Frosting
  • 2 cups butter (softened)
  • 2 lbs powdered sugar

Instructions

Cake
    Cup of Yum
  1. Preheat oven to 350°F and spray 3 8" cake pans with cooking spray.
  2. Combine both cake mixes, egg whites, oil, and water in a large mixing bowl and mix until well incorporated.
  3. Divide cake batter evenly between three bowls. Add red food coloring to one bowl and blue to another. Mix well and add additional food coloring, a little at a time, until desired color.
  4. Pour each color batter into a separate cake pan then bake for 20 - 25 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool cakes in pans for 5 minutes, then invert them onto a cooling rack to cool completely.
Buttercream
  1. Combine butter and powdered sugar in a large mixing bowl. Whip until it is light and fluffy. Add a tablespoon of milk or water to get the right consistency if needed.
Cake Assembly
  1. Place the red cake on your cake plate and frost the top.
  2. Stack the white cake on top of the frosted red cake, frost the top, then put the blue cake on top of that.
  3. After layers are all stacked, completely frost the entire cake, including the sides. If you have any buttercream left, you can pipe it around the top edges for extra decoration.
  4. Garnish the top with patriotic sprinkles and maraschino cherries. Chill for at least an hour before serving.

Notes

  • Refrigerate the leftovers covered with plastic wrap or with a cake plate cover for up to five days. It’s best eaten within three days but okay for up to five.
  • Add red, white, and blue sprinkles to the white cake batter to get more of a funfetti effect if you want something a little more playful than the traditional red, white, and blue layers.
  • Stick with gel food coloring for the most vibrant colors.
  • Add a tsp of almond extract to the cake batter for even more delicious flavor. This pairs great with the cherries on top!
