Easy Roasted Cherry Tomatoes are halved and mixed with garlic, Italian parsley, basil, olive oil, and a touch of balsamic vinegar for balanced flavor. Roasting concentrates their sweetness and softens them while the herbs add freshness. A touch of red chili flakes can add gentle heat. Finished with fresh basil and parsley garnish, these tomatoes can be served as a side, topping, or sauce component with pasta or bread.
Ingredients
- 3 ½ cups cherry tomato halved
- 5 garlic chopped, cloves
- 1 tablespoon Italian parsley minced
- 1 tablespoon basil minced
- 1 tablespoon olive oil
- ½ teaspoon balsamic vinegar
- ¼-½ teaspoon salt depends on your saltiness preference
- ¼-½ teaspoon red chili flakes optional for spice
- basil for garnish, fresh, minced
- Italian parsley for garnish, fresh, minced
Instructions
- Preheat the oven to 375 degrees F (190 degrees C), and line a baking sheet with a silicone mat or parchment paper.
- In a large bowl, add all the ingredients and thoroughly mix together
- Place the tomato mixture onto the prepared baking sheet and bake for 25 minutes, or until all the tomatoes look roasted.
- Garnish with minced basil and Italian parsley.
Notes
- Keep the roasting liquid to drizzle over pasta, rice, or as a dipping sauce for bread.
- For more smoky flavor, briefly broil the tomatoes after roasting.
- Whole cherry tomatoes can be roasted but may burst and look less uniform though taste remains great.
