Easy Roasted Chickpeas

These roasted chickpeas with Parmesan couldn't be simpler to make, and make a perfect snack or crispy topper for salads and soups.

Ingredients

  • 2 ounce chickpeas drained, canned
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper freshly ground
  • ¼ cup Parmesan Cheese grated

Instructions

  1. Preheat oven to 400°F.
  2. Drain and rinse the chickpeas beans, then pat dry. Place the beans on a baking sheet, drizzle with the olive oil, and sprinkle with the kosher salt, and freshly ground black pepper. Toss to coat.
  3. Bake the beans for 25-30 minutes, or bake longer for extra crispy beans. Remove from the oven, cool, then toss with Parmesan cheese. Serve warm or at room temperature. Refrigerate for up to 1 week.
