Easy Roasted Zucchini

Ingredients

Roasted Zucchini
  • 2 medium zucchini about 1 ½ pounds
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon dried thyme leaves
  • 1 lemon
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 400°F. Line a baking tray with parchment.
  2. Wash zucchini and cut into fries. Zest and juice the lemon.
  3. In a large bowl toss together the zucchini, olive oil, garlic, thyme, 1 teaspoon of lemon zest, salt, and pepper. Spread in an even layer on the baking tray.
  4. Bake until tender and slightly golden, about 15 minutes. Remove from oven; drizzle with 1 tablespoon lemon juice, gently toss, and bake for an additional 2-3 minutes.

Notes

  • Leftovers will keep an airtight in the refrigerator for up to 3 days.
