Ingredients

  • 3 pound Beef Rump Roast
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 tablespoons vegetable oil
  • 2 medium carrots , peeled and cut into 2 inch chunks
  • 3 yukon potatoes , peeled and cut into 2 inch chunks
  • 1 yellow onion , cut into 1 inch chunks
  • 3 garlic cloves , minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce 

Instructions

  1. Preheat oven to 325 degrees.
  2. Season beef with 1 teaspoon kosher salt and 1/2 teaspoon coarse ground black pepper.
  3. Add vegetable oil to large pot on high heat.
  4. Sear on all sides until well browned, about 3-4 minutes on each side. Remove from heat.
  5. Add in the carrots, potatoes, onion and garlic.
  6. Mix the beef broth, Worcestershire sauce and pour it over the vegetables.
  7. Cover and cook in the oven for 3 to 3 1/2 hours.
