Easy Salsa Verde Chicken

Simply baking chicken covered in salsa verde, served over rice or quinoa, makes for one of the easiest dinners ever.

Ingredients

  • 1 ½ lbs boneless chicken breast or chicken tenders
  • 1 teaspoon garlic powder
  • 16 oz salsa verde jar
Optional toppings of choice
  • ½ cup Monterey jack cheese
  • ¼ cup cilantro fresh
  • black beans
  • corn
  • avocado

Instructions

    Cup of Yum
  1. Preheat oven to 350 F
  2. Place the chicken in a baking dish
  3. Pour about ¾ of the jar of salsa verde over top of the chicken
  4. Bake for 30 minutes or until chicken is no longer pink in the middle. (180 degrees on a meat thermometer)
  5. Remove from oven and serve over rice or quinoa.
  6. Top with toppings of choice listed above.
