Ingredients
- 1 tablespoon olive oil
- 1 cup sweet onion diced
- 1 cup red bell pepper diced
- 4 cloves garlic minced
- 1 pound Italian sausage
- 1 teaspoon dried oregano
- salt to taste
- pepper to taste
- 28 ounce can crushed tomatoes
Instructions
- In a large sauté pan over medium heat, cook sausage until browned. Remove from pan.
- Return pan to heat, add the olive oil. When hot, add the onions and bell peppers, season with salt and pepper. Sauté until they have released their water and water has evaporated, and they are soft and starting to turn golden.
- Add the garlic and oregano, sauté for 30 seconds. Stir in the crushed tomatoes, then the sausage. Simmer for at least 20 minutes to let flavors combine.
