Easy Seafood Pasta with Calamari, Shrimp, Scallops and Tomatoes

Ingredients

  • 12 oz pasta
  • 3 Tablespoon olive oil
  • 4 garlic cloves minced
  • 1 pint cherry tomatoes halved
  • ½ cup pureed tomatoes
  • ¼ teaspoon crushed red pepper
  • 1 teaspoon salt
  • ½ cup chicken broth
  • ½ lb calamari
  • ½ lb scallops
  • 1 lb Shrimp
  • 2 Tablespoon fresh parsley

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Heat a large pan of salted water over high heat and cook the pasta, following package directions.
  3. Sautee the garlic for 1 minute, then add the cherry tomatoes.
  4. Cook, stirring, for 5 minutes until the tomatoes start to break down.
  5. Add the pureed tomatoes, red pepper and salt. Stir to mix.
  6. Add in the chicken broth and ½ c of pasta water and cook for 2 minutes.
  7. Stir in the calamari and cook for 1 minutes.
  8. Add the scallops and let cook for 2 minutes, stirring.
  9. Add the shrimp and cook until no longer pink.
  10. Stir the drained pasta into the pot and serve immediately, sprinkled with parsley.
