Ingredients
- 3-4 roma tomatoes finely chopped
- 1 English cucumber or 4 small Persian cucumbers finely chopped
- ½ green or red bell pepper finely chopped
- ½ red onion finely chopped
- ¼ cup parsley finely chopped
- 2 Tablespoons mint finely chopped
- 1 Tablespoon fresh dill finely chopped
- 4 Tablespoons fresh lemon or lime juice I did lemon
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon sumac
- ¼ teaspoon sea salt to taste
- ¼ teaspoon pepper to taste
Instructions
- Combine all ingredients together in a large bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.

- Storing: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors will continue to develop, but the veggies will release some liquid as they sit. Give it a good stir before serving!
