Easy Shirazi Salad

This simple Shirazi Salad is a refreshing Persian dish made with tomatoes, cucumbers, red onion, and fresh herbs, all tossed in olive oil and lemon (or lime) juice. It's crisp, flavorful, and the perfect side dish for any meal.

Ingredients

  • 3-4 roma tomatoes finely chopped
  • 1 English cucumber or 4 small Persian cucumbers finely chopped
  • ½ green or red bell pepper finely chopped
  • ½ red onion finely chopped
  • ¼ cup parsley finely chopped
  • 2 Tablespoons mint finely chopped
  • 1 Tablespoon fresh dill finely chopped
  • 4 Tablespoons fresh lemon or lime juice I did lemon
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon sumac
  • ¼ teaspoon sea salt to taste
  • ¼ teaspoon pepper to taste

Instructions

    Cup of Yum
  1. Combine all ingredients together in a large bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.

Notes

  • Storing: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors will continue to develop, but the veggies will release some liquid as they sit. Give it a good stir before serving!
