Easy Shrimp Ceviche Recipe

This shrimp ceviche dish is fresh, healthy and delicious. It’s also really quick and easy to make. This classic Latin American dish features succulent shrimp marinated in lime juice combined with finely chopped veggies and spices, creating a refreshing and tangy appetizer or light lunch.

Ingredients

  • 2 lbs cooked shrimp chopped
  • 1 cup roma tomatoes diced
  • ½ cup red onion diced
  • ½ cup cilantro leaves finely chopped
  • 1 cucumber diced
  • 1 Jalapeño ribs and seeds removed, diced
  • 1 avocado diced
  • ½ cup lime juice
  • ⅓ cup orange juice
  • ¼ cup lemon juice
  • salt and pepper to taste

Instructions

  1. Place the cooked shrimp, tomatoes, cucumber, jalapeño, onion, avocado and cilantro a bowl.
  2. Pour the lime, orange and lemon juice over the mixture. Season with salt and pepper to taste.
  3. Cover and refrigerate for 15-30 minutes.
  4. Serve with tortilla chips or crackers of your choice, optional.
