Easy Slow Cooker Pork Roast

This 3 Ingredient Pork Roast in the Slow Cooker will be your new favorite pork recipe! The pork is cooked all day to tender perfection with just 2 ingredients.

Ingredients

  • 1 pound pork loin roast
  • 2 packets Italian dressing seasoning mix 1 packet for seasoning the pork, 1 packet for the sauce
  • 1 .5- ounce can cream of chicken soup

Instructions

  1. Rub the pork loin roast with 1 packet of Italian dressing seasoning mix, ensuring it's evenly coated on all sides.
  2. OPTIONAL STEP: Sear pork loin on all sides to give a golden brown crust and seal in juices. This will require 2 Tablespoons of cooking oil.
  3. In a small bowl, combine the can of cream of chicken soup with the second packet of Italian dressing seasoning mix and ½ cup water.  Stir until smooth and well blended.
  4. Place the seasoned pork loin in the slow cooker. Pour the creamy Italian sauce over the top, covering the meat as evenly as possible.
  5. Cover and cook on low for 6-7 hours, or until the pork is tender and easily shreds with a fork. (Alternatively, you can cook on high for 3-4 hours.)
  6. Once the pork is done, remove it from the slow cooker and let it rest for a few minutes before shredding or slicing. Spoon the creamy sauce over the pork slices for added flavor.

Notes

  • I recommend this extra step to seal in the juices and add even more depth of flavor to the pork. This isn’t to cook it, just to add a crust for flavor.
  • The pork is excellent served with the sauce that forms in the crockpot with the pork. You can make it thicker by adding a cornstarch slurry added at the end. 
  • This dish will also work with a pork shoulder or any other pork roast. The cooking time will be slightly different so I recommend having a meat thermometer on hand to ensure it is fully cooked before you shred or slice it.
  •
