Ingredients
- 1 pound pork loin roast
- 2 packets Italian dressing seasoning mix 1 packet for seasoning the pork, 1 packet for the sauce
- 1 .5- ounce can cream of chicken soup
Instructions
- Rub the pork loin roast with 1 packet of Italian dressing seasoning mix, ensuring it's evenly coated on all sides.
- OPTIONAL STEP: Sear pork loin on all sides to give a golden brown crust and seal in juices. This will require 2 Tablespoons of cooking oil.
- In a small bowl, combine the can of cream of chicken soup with the second packet of Italian dressing seasoning mix and ½ cup water. Stir until smooth and well blended.
- Place the seasoned pork loin in the slow cooker. Pour the creamy Italian sauce over the top, covering the meat as evenly as possible.
- Cover and cook on low for 6-7 hours, or until the pork is tender and easily shreds with a fork. (Alternatively, you can cook on high for 3-4 hours.)
- Once the pork is done, remove it from the slow cooker and let it rest for a few minutes before shredding or slicing. Spoon the creamy sauce over the pork slices for added flavor.

Notes
- I recommend this extra step to seal in the juices and add even more depth of flavor to the pork. This isn’t to cook it, just to add a crust for flavor.
- The pork is excellent served with the sauce that forms in the crockpot with the pork. You can make it thicker by adding a cornstarch slurry added at the end.
- This dish will also work with a pork shoulder or any other pork roast. The cooking time will be slightly different so I recommend having a meat thermometer on hand to ensure it is fully cooked before you shred or slice it.
