Easy Spanish Rice

Need a super easy meal to make on a busy weeknight? This Easy Spanish Rice is just what the doctor ordered! It is so flavorful and I add a zucchini to bump up the veg in this one pan dish!

Ingredients

  • olive oil to coat pan.
  • 1/2 cup diced onion
  • 3 cloves minced garlic 
  • 1 small zucchini, cut into pieces
  • 1 lb ground beef
  • 1 tbsp ground cumin
  • 1 tsp dried coriander
  • 1 tbsp chili powder
  • 1.5 cup rice
  • 1 cup water
  • 2 cups crushed tomatoes
  • 2 tsp salt
  • 1 tsp pepper

Instructions

  1. Heat olive oil in pan. Add onions and soften a few minutes. Add garlic, zucchini and meat and saute until meat is cooked through. 
  2. Add tomatoes, spices and rice. Heat to boiling. Reduce heat, simmer 20 minutes, or according to package instructions. 
  3. Serve with cheese, lettuce, tomato, avocado, hot sauce, or my Nuclear Jalapeno Hot Pepper Relish!

Notes

  • Rice should be cooked to soft texture, with no crunch left. 
  • Always reduce heat to low temperature when cooking.
  • I find the best rice for this recipe is Uncle Ben's
  •
