Easy Strawberry Compote transforms fresh strawberries into a soft, sweet-tart sauce thickened gently with cornstarch. The addition of orange and lemon juice balances the sweetness and brightens the flavor. Simmering until the strawberries break down creates a warm, spoonable topping that complements pancakes, waffles, or desserts with a fresh berry taste and smooth texture.
Ingredients
- 2 lbs strawberry fresh
- 1 tablespoon lemon juice
- 1/4 cup orange juice
- 1 tablespoon corn starch + 1 tablespoon of water for a slurry
- 2 tablespoons white sugar
Instructions
- Hull Strawberries With a pairing knife, remove the top green part of the strawberry and then cut the strawberries in half or quarters.
- Bring to a Boil Create a cornstarch slurry by adding cornstarch to a small bowl with 1 tablespoon of water and whisking. Add the strawberries, sugar, OJ, cornstarch slurry, and lemon juice to a medium-sized saucepan and heat over high heat until it comes to a boil.
- Simmer and Reduce Turn the heat down to medium-low to bring the mixture to a simmer. Simmer until the strawberries are soft and give them a gentle mash with a masher or fork. Let simmer and reduce for approximately 10 minutes.
- Serve or Store Serve hot or cold over your favorite pancakes, waffles, french toast, or ice cream or cake! Store in the fridge for up to 2 weeks until you're ready to use it.
Notes
- Substitute strawberries with blueberries, raspberries, blackberries, or peaches for variation.
- If orange juice is unavailable, water can be used instead, though citrus adds distinct flavor.
- Simmering longer (5 to 10 additional minutes) produces a thicker compote consistency.
- Serve the compote warm or cold over pancakes, waffles, ice cream, cake, or toast.
- Store leftovers in the refrigerator for up to two weeks.
