Easy Sugar-Free Cake Recipe

Ingredients

  • 2 tablespoons unsalted butter
  • 1/2 cup sugar-free sweetener
  • 1/4 cup heavy cream
  • 2 cups almond flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 cup sugar-free chocolate chips
  • 1/2 cup pecans

  1. Preheat the oven to 350°F. Grease an 8x8 baking dish.
  2. In a small saucepan bring the butter, sweetener, and heavy cream to a gentle boil. Let the mixture cool for about 15 minutes, until it reaches room temperature.
  3. Place the remaining ingredients in a bowl and stir together.
  4. Add the cooled cream mixture to the bowl and mix thoroughly to combine. Spread the batter in the prepared pan. Top with the chocolate chips and press them into the batter with your fingers.
  5. Bake for 25 minutes and set aside to completely cool before serving.
