Ingredients
- 260 g sweetcorn
- 2 eggs whisked
- 100 g plain flour
- 1 teaspoon baking powder
- 4 Spring onion (Scallion) sliced
- 10 g fresh coriander (cilantro) finely chopped
- 1 tablespoon olive oil
Instructions
- Whisk 2 Eggs and then add 100 g Plain flour and 1 teaspoon Baking powder.
- Add 260 g Sweetcorn, 4 Spring onion (Scallion), and 10 g Fresh coriander (cilantro). Mix well.
- Heat 1 tablespoon Olive oil in a pan and add spoonfuls of the corn batter. Using two spoons, shape into rough circles around 10cm/4in in diameter. Fry for 2 minutes on each side.

Notes
- You can use fresh, frozen or canned sweetcorn in this recipe.
- You might think this is lot of flour, but that much is needed to help the fritters stay together.
- Add a kick of spice to these fritters by stirring a finely diced red chilli in to the batter.
- You can use wholewheat flour instead of plain if you prefer.
- A little sprinkle of salt on top of the fritters when serving really brings out the flavour. Obviously leave this out if serving them to kids.
