Easy Taco Salad
If you're looking for a quick dinner you can throw together after a long day, we've brought together all of the best elements of a good taco and created a Mexican salad that you'll no doubt add to your weekly dinner rotation.
Ingredients
TACO MEAT
- 1 onion finely diced
- 1 red bell pepper diced
- 1 lb extra lean beef mince
- 2 teaspoons garlic minced
- 2 tomato diced
- 1 taco seasoning mix packet
- ¼ cup water
SALAD
- 1 cos lettuce bunch, or lettuce of choice
- 1 cherry tomatoes halved, punnet
- 3 oz mozzarella cheese light
- Any other salad vegetables you like!
GUACAMOLE MIX
- 1 avocado ripe
- 4 tablespoons Greek yogurt low fat
- 1 tablespoon lemon juice
- salt to season
Instructions
- Pan fry onion and red capsicum/bell peppers until onion is soft
- Add the mince, and cook while stirring until browned, then add your garlic and tomatoes
- Cook stirring until the tomatoes soften, and sprinkle Taco seasoning over the meat along with the water
- Cook while stirring, and allow the mix to simmer gently for a further 5 minutes, or until the seasoning is beautifully combined into the meat.
- Prepare salad in a bowl with salad ingredients, and set aside.
- Combine the avocado, yoghurt, salt, lemon juice and garlic powder in a smaller bowl, and mash well until mixed through.
- Add the Taco meat to the salad, and top with the guacamole
- Enjoy!
Notes
- Option serve your taco salad with a side of our fried tortilla chips or our avocado salsa.
- If you'd like a healthy hit of carbs, toss the meat and salad inside one of our flour tortillas.
