Easy Taco Stuffed Sweet Potatoes feature baked sweet potatoes filled with seasoned ground meat, lentils, veggies, or beans, topped with a variety of fresh and flavorful garnishes. The combination results in a hearty, satisfying meal with tender potato flesh contrasting with spiced fillings and fresh toppings like cheese, salsa, avocado, and cilantro. This dish adapts to numerous fillings and toppings, making it versatile for different tastes.
Ingredients
FEISTY FILLING OPTIONS:
- ground beef chicken, or turkey seasoned your favorite way and browned in a skillet!
- lentil veggie taco filling recipe
- vegetables and/or sautéed veggies
- black beans and/or sautéed veggies
TASTY TOPPINGS - Choose your favorites!
- diced tomatoes
- cheddar cheese shredded; or pepper jack cheese
- sour cream or plain Greek yogurt
- cilantro fresh
- jalapeño sliced
- cabbage shredded or slaw
- onion chopped; red or green
- vegetable fresh or leftover, grilled, roasted or sautéed
- avocado fresh, chopped or sliced
- guacamole
- Pico de Gallo
- salsa verde
- salsa
- lime for a burst of citrus, wedges
- tortilla chips crumbled, for crunch
Instructions
- Pre-heat oven to 400 degrees F.
- Pierce your potatoes a few times with a fork and place on a foil lined baking sheet.
- For extra crispy skins, rub with oil and sprinkle with kosher salt.
- Bake 45-60 minutes until tender.
- Choose your protein option(s) from the above list and cook via preferred method or dive into your fridge for last night's leftovers and get ready to make magic!
- Once your potatoes are done baking, allow to cool slightly and slice vertically.
- Fill with your choice of taco filling of choice (see above for tasty options; I went with black beans and leftover taco meat this time around) and top with cheese.
- For melty cheese, pop the potatoes back in the oven for 5-10 minutes, then pile mile-high with all your favorite taco toppings! Anything goes on taco night!

- Microwaving sweet potatoes speeds cooking: pierce and cook on high for 7-8 minutes, adjusting time as needed based on size.
- To melt cheese toppings, briefly return stuffed potatoes to the oven or microwave after filling.
- Prepare sweet potatoes and taco fillings ahead; store separately for easy lunch or dinner assembly.
- Use leftover taco meats or beans as convenient fillings for quick meal assembly.
