Easy Tater Tot Casserole Recipe

This easy tater tot casserole recipe is the best. It's family-friendly comfort-food loaded with ground beef, mixed vegetables, soup, cheese, and tater tots.

Ingredients

  • 1 pound ground beef 90% lean
  • 1 1/2 cups mixed vegetables frozen
  • 1/2 teaspoon salt divided
  • 1/2 teaspoon black pepper divided, ground
  • 1/2 teaspoon garlic powder divided
  • 10.5 oz. cream of mushroom soup can
  • 10.5 oz. cheddar cheese soup canned
  • 2 cups cheddar cheese shredded
  • 28 oz. tater tots frozen, bagged

Instructions

  1. Preheat oven to 375°F. Spray a 9x13” baking dish with cooking spray.
  2. Place a large skillet over medium-high heat. Add the ground beef. Break the beef apart with a wooden spoon. Cook until the beef is browned, about 6 minutes.* Add the frozen mixed vegetables, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon garlic powder. Stir well.
  3. Add the mushroom soup and cheddar soup to the beef. Stir until the soup is well incorporated.
  4. Transfer the beef mixture to the baking dish. Spread the beef out into an even layer.
  5. Sprinkle the shredded cheese evenly over the beef.
  6. Top with an even layer of tater tots.
  7. Sprinkle the tater tots with the remaining 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon garlic powder.
  8. Bake for 35 minutes, until the tater tots are golden and crispy and the filling is bubbling.

Notes

  • *I like to use at least 90% lean ground beef, so there is very little grease and I don't need to strain it.  But, excess grease can be removed, if necessary.
