EASY TERIYAKI CHICKEN AND FRIED RICE
This teriyaki chicken with fried rice combines savory, sweet flavors in an easy, one-pan meal perfect for busy weeknights.
Ingredients
For the Chicken:
- chicken thighs or breasts, boneless skinless, cubed, 1 lb
- teriyaki sauce ⅓ cup
- soy sauce 2 tablespoons
- honey 1 tablespoon
- garlic 1 teaspoon, minced
- ginger 1 teaspoon, grated
- vegetable oil 1 tablespoon
For the Fried Rice:
- rice cooked and cooled, preferably day-old, 3 cups
- egg 2, lightly beaten
- peas frozen mixed, 1 cup
- carrots
- corn
- soy sauce 2 tablespoons
- sesame oil
- green onions 2, chopped
Instructions
Cook the Chicken:
- Heat vegetable oil in a skillet over medium heat. Add chicken and cook until golden brown.
- Mix teriyaki sauce, soy sauce, honey, garlic, and ginger. Pour over chicken and cook until glazed, about 3-5 minutes.
Prepare the Fried Rice:
- Push chicken to one side of the skillet. Add sesame oil and scrambled eggs, stirring until cooked.
- Add rice and mixed vegetables to the skillet. Stir in soy sauce and cook until heated through.
- Combine the chicken with the rice, mix well, and cook for an additional 2 minutes.
- Serve hot, garnished with green onions.
