Notes

  • Type Of Fish - Use lean flaky fish. They are mild in flavor and take on the spice rub well, plus cook pretty fast. Strong flavored fish like salmon, mackerel, tuna might not work.
  • Cooking Fish - Do not grill/cook fish for longer. Lean white fish cooks really fast. With fork test if you are able to flake it, its done. Do not cook any further.
  • To Make Red Cabbage Slaw - Use 1 cup shredded red cabbage, 1 white onion sliced, 1 jalapenos peppers diced, Juice of 1 lime, handful of finely chopped cilantro, ¼ cup Greek yogurt (or sour cream) salt and pepper to taste. Toss everything together, keep in fridge covered until ready to serve.
  • To Make Mango Salsa - When fresh mangoes are in season, you must make mango salsa. To serve it over grilled meat. grilled fish, tacos, serve it with nachos. Find the recipe for mango salsa here
