Easy Tofu Adobo

Ingredients

  • ½ cup white vinegar
  • ½ cup soy sauce
  • 10 garlic minced, cloves
  • 3 bay leaf
  • ½ teaspoon black pepper
  • 1 tablespoon brown sugar
  • 2 packs tofu sliced, super firm
  • 1 tablespoon canola oil
  • ¼ cup green onions thinly sliced

Instructions

  1. In small bowl mix the vinegar, soy sauce, garlic, bay leaves, black pepper, and sugar. Mix well and set aside.
  2. Press and dry the tofu. Then, slice it into 5 slices.
  3. In a large baking dish, place the tofu slices and pour the soy sauce mixture.
  4. Marinate the tofu for 2 hours or overnight. The longer it marinates, the more flavorful it will be.
  5. Once the tofu is marinated, in large pan over medium high heat, heat the oil. Then carefully place the tofu in the hot pan. Do not add the marinade.
  6. Fry the tofu for 3 minutes. Then, flip and fry the other side for another 3 minutes. Once the tofu is nice and fried on both sides, pour the marinade.
  7. Cook under medium low heat for 10 minutes or until most of the liquid has evaporated.
  8. Garnish with green onion and serve hot.

Notes

  • Press and dry tofu well to ensure it absorbs the marinade and fries properly without excess moisture.
  • Use non-reactive cookware such as stainless steel or ceramic to avoid off-flavors from the acidic vinegar.
  • Marinate the tofu for at least 2 hours, longer marination improves flavor penetration.
  • For a thinner sauce, add water or vegetable broth; for a thicker sauce, incorporate a cornstarch slurry and simmer until desired consistency.
  • You may cut sliced tofu into various shapes like triangles or cubes to suit presentation.
  • Serve tofu adobo hot with rice or vegetables to balance its tangy and savory profile.
