Ingredients
For the whipped goat's cheese
- 2 tbsp cream
- 100 g (3oz) soft goat's cheese
- salt and pepper to taste
For the toast
- 4 slices bread
- 2 large tomatoes sliced
- 3 tbsp capers rinsed
- chopped chives
- fresh basil
Instructions
- In the bowl of a food processor, combine the goat's cheese, cream, salt and pepper then blend until smooth.
- Heat a few tablespoons of oil in a small frying pan set over medium-high heat.
- Once hot, add the drained capers and cook for a few minutes until crisp. Remove with a slotted spoon and allow to drain on paper towels.
- Butter the bread generously on each side with butter then toast in a hot pan until golden brown and crisp on both sides.
- Spread a dollop of goat's cheese on each slice of bread then top with sliced tomatoes.
- Season with salt and pepper then top with the capers, finely chopped chives and fresh basil.
- Serve immediately.
