Easy Turkey Taco Soup

A super quick and hearty turkey taco soup made with beans, salsa, taco seasoning, and shredded roasted turkey.

Ingredients

  • 1 tablespoon olive oil
  • 15- ounce black beans rinsed and drained, canned
  • 15- ounce red kidney beans rinsed and drained, can
  • 15- ounce corn rinsed and drained, canned
  • 3 tablespoons taco seasoning
  • 1 cup mild salsa
  • 15- ounce diced tomato petite, canned
  • 2-3 cups turkey shredded
  • 2 cups chicken broth low-sodium; or turkey broth

Instructions

  1. In a large Dutch oven or soup pot, heat the oil over medium-high heat. Add the beans, corn, and taco seasoning. Brown until the veggies are softened. 
  2. Add the salsa, tomatoes, shredded turkey, and broth. Bring to a boil before reducing the heat and simmering for 20 minutes. 
  3. Remove from heat and serve in bowls topped with sour cream and avocado.
