Easy Vegan Teriyaki Sauce

This easy vegan teriyaki sauce blends soy sauce, brown sugar, maple syrup, fresh and ground ginger, garlic, and apple cider vinegar, thickened with cornstarch. Ingredients

  • 1 cup water divided, ¼ cup
  • ½ cup soy sauce
  • ¼ cup brown sugar packed, 1 tablespoon
  • 1 tablespoon maple syrup or more brown sugar
  • 1 teaspoon ginger minced fresh
  • 2 garlic minced, small cloves
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon apple cider vinegar
  • 2 tablespoons corn starch
  • ¼ cup of water

Instructions

  1. In a medium pot, whisk together 1 cup of the water, soy sauce, brown sugar, maple syrup, fresh ginger, fresh garlic, ground ginger, ground garlic, and apple cider vinegar.
  2. In a small bowl, whisk together the cornstarch and the remaining ¼ cup of water and add it to the pot.
  3. Place pot over high heat and whisk while bringing to a boil, allowing the sauce to boil for 5 minutes while whisking consistently. Remove from heat and pour into a glass container.

Notes

  • Adjust sweetness or saltiness by varying brown sugar and soy sauce amounts to fit your taste.
  • Omitting cornstarch will yield a thinner marinade consistency; increase cornstarch and simmer longer for a thicker glaze.
  • Simmer longer for more developed flavors but expect the sauce to thicken further and reduce in volume.
