Easy Vegan Teriyaki Sauce
This easy vegan teriyaki sauce blends soy sauce, brown sugar, maple syrup, fresh and ground ginger, garlic, and apple cider vinegar, thickened with cornstarch. It's a versatile sauce with a smooth, glossy texture and balanced sweet-savory flavors, suitable for glazing, dipping, or marinating in vegan cooking.
Ingredients
- 1 cup water divided, ¼ cup
- ½ cup soy sauce
- ¼ cup brown sugar packed, 1 tablespoon
- 1 tablespoon maple syrup or more brown sugar
- 1 teaspoon ginger minced fresh
- 2 garlic minced, small cloves
- ½ teaspoon ground ginger
- ½ teaspoon garlic powder
- ½ teaspoon apple cider vinegar
- 2 tablespoons corn starch
- ¼ cup of water
Instructions
- In a medium pot, whisk together 1 cup of the water, soy sauce, brown sugar, maple syrup, fresh ginger, fresh garlic, ground ginger, ground garlic, and apple cider vinegar.
- In a small bowl, whisk together the cornstarch and the remaining ¼ cup of water and add it to the pot.
- Place pot over high heat and whisk while bringing to a boil, allowing the sauce to boil for 5 minutes while whisking consistently. Remove from heat and pour into a glass container.
Notes
- Adjust sweetness or saltiness by varying brown sugar and soy sauce amounts to fit your taste.
- Omitting cornstarch will yield a thinner marinade consistency; increase cornstarch and simmer longer for a thicker glaze.
- Simmer longer for more developed flavors but expect the sauce to thicken further and reduce in volume.
