Ingredients

  • 8 egg large
  • 1 cup cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup spinach chopped, fresh
  • 2/3 cup red bell pepper diced

Instructions

  1. Heat oven to 350°F and prepare a 12-cup muffin tin with liners or a light layer of cooking spray.
  2. Blend the eggs, cottage cheese, garlic powder, salt, and black pepper in a blender until the mixture is smooth.
  3. Transfer the blended mixture to a bowl. Mix in the chopped spinach and diced red bell pepper until well integrated.
  4. Distribute the egg mixture evenly into the muffin cups, filling each to approximately two-thirds capacity to leave space for rising.
  5. Bake in the preheated oven for 20-25 minutes or until the egg bites are set. Allow them to cool for a few minutes before removing from the tin.
