Egg Cheese and Avocado Sandwich

Better than an Egg McMuffin, this breakfast (lunch or dinner) sandwich hits all the right notes with creamy avocado and caramelized onions!

Ingredients

  • 1 egg fried
  • 1 lice Canadian bacon fried
  • 1 English Muffin toasted
  • 1 lice Colby-Jack cheese pepper
  • ¼ avocado mashed
  • 1 lice tomato ripe
  • ¼ cup onion optional, but recommended, warmed through, caramelized, leftover
  • salt to taste
  • black pepper to taste
  • butter pat

Instructions

assemble the sandwich

  1. Toast the English muffin.
  2. Spread mashed avocado over the muffin - sprinkle with a little salt.
  3. Add a slice of tomato, then the bacon, slice of cheese and egg. Top with caramelized onions and the remaining muffin half. Inhale.
