Egg Fried Rice

Ingredients

  • 3 cups cooked and cooled white rice
  • 2 tablespoons vegetable oil
  • 1 shallot (or ½ onion)
  • 2 garlic cloves, minced
  • 1 cup fresh or frozen vegetables
  • 3 eggs
  • 1½ tablespoon soy sauce
  • 1½ tablespoon oyster sauce
  • ½ tablespoon sesame oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 teaspoon sugar

  1. Heat oil in a large skillet or large wok over medium high heat. Add green onions and garlic. Saute for 1-2 minutes until fragrant.
  2. Add in the mixed vegetables. Cook for 1-2 minutes. Push the vegetables to one side of the skillet.
  3. Pour the beaten eggs into the open space and scramble until just cooked - about 30 seconds. Incorporate the eggs with the vegetables.
  4. Add rice, sesame oil, soy sauce, oyster sauce, salt, pepper, and sugar. Give it a good stir. Then, turn the heat to medium-high and let the bottom get crispy for 2 minutes. Stir, and repeat a couple of times.
  5. Garnish with green onions and serve hot.
