Egg Roll in a Bowl
Egg Roll in a Bowl is a ground beef and coleslaw mix stir-fry seasoned with soy sauce, ground ginger, and garlic powder. The cooked beef and cabbage create a dish combining savory meat flavors with the crunch and mild sweetness of cabbage and carrots. Green onions sprinkled at the end add a fresh bite. This recipe offers a quick, skillet-prepared meal without the need for wrappers or frying, making it practical for casual dinners and easy clean-up.
Ingredients
- 1 pound ground beef lean
- ½ teaspoon ground ginger
- ½ teaspoon garlic powder
- ¼ cup soy sauce
- 1 bag (14-16 ounces) coleslaw mix cabbage and carrot mixture, prepared
- ¼ cup green onion chopped
Instructions
- Crumble the ground beef into a large skillet and cook over medium heat until fully browned. Drain off any excess fat.
- Stir in the ground ginger, garlic powder, and ½ of the soy sauce.
- Add the coleslaw mix and stir well.
- Continue cooking the mixture over low to medium heat, stirring often, then add the remaining soy sauce as the coleslaw mix begins to soften.
- Cook to your desired doneness, then top with green onions and additional soy sauce if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in a microwave or on the stove over medium-low heat to retain texture.
- Freeze leftovers in a freezer-safe container for up to 3 months; thaw overnight in the refrigerator before reheating.
- Adding soy sauce just before reheating helps revive the dish's flavor after storage.
