Egg Salad Sandwich

Ingredients

  • 5 pieces hard-boiled eggs
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 stalk green onions - chopped
  • 3 tablespoon pickle relish
  • ¼ cup chopped celery (optional)
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 5 pieces croissants - can be other bread

Instructions

  1. Cut hard-boiled eggs into small dices using a knife or egg slicer.
  2. Place all chopped eggs into a bowl and add the mayonnaise and mustard. Mix just until blended. Add the chopped green onions, pickle relish, and chopped celery in the bowl and season with salt and pepper. Mix well.
  3. Cut croissant in half. You may put a layer of lettuce on one slice of bread, spread the egg mixture on top of the lettuce, put another slice of bread on top.
