Ingredients

The salad:
  • 6 egg peeled, hard boiled
  • ¼ cup mayonnaise light
  • 1 green onion thinly sliced
  • 1 celery diced, large stalk
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper ground
The tomatoes:
  • 6 tomato medium
  • 2 tablespoons parsley flat-leaf, minced

Instructions

The egg salad:
    Cup of Yum
  1. In a medium bowl, smash thehard-boiled eggs with the back of a fork. Add the mayonnaise green onion,celery, Dijon mustard, pepper and salt. Stir to combine.
The tomatoes:
  1. Core the tomatoes and, using a small spoon, scoop out the insides.
  2. Divide the filling evenly between the tomatoes.
  3. Garnish with parsley. Serve.
