Egg Salad Stuffed Tomatoes
While we all love a good egg salad sandwich, these Egg Salad Stuffed Tomatoes are a fantastic way to lighten things up for brunch or lunchtime. 125 calories and 1 Weight Watchers SP
Ingredients
The salad:
- 6 egg peeled, hard boiled
- ¼ cup mayonnaise light
- 1 green onion thinly sliced
- 1 celery diced, large stalk
- 2 teaspoons Dijon mustard
- ¼ teaspoon kosher salt or to taste
- ¼ teaspoon black pepper ground
The tomatoes:
- 6 tomato medium
- 2 tablespoons parsley flat-leaf, minced
Instructions
The egg salad:
- In a medium bowl, smash thehard-boiled eggs with the back of a fork. Add the mayonnaise green onion,celery, Dijon mustard, pepper and salt. Stir to combine.
The tomatoes:
- Core the tomatoes and, using a small spoon, scoop out the insides.
- Divide the filling evenly between the tomatoes.
- Garnish with parsley. Serve.
