Egg Salad Without Mayo

A terrific version of light egg salad, with no mayo!

Ingredients

  • 6 large eggs hard-boiled and peeled
  • 1 medium avocado mashed
  • 1/4 cup plain greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup red onion finely chopped
  • 1/4 cup celery finely chopped
  • salt and pepper to taste
  • Fresh dill or parsley chopped (optional for garnish)

Instructions

  1. In a large bowl, combine the mashed avocado, Greek yogurt, Dijon mustard, and lemon juice. Mix until smooth and creamy.
  2. Chop the hard-boiled eggs into small pieces and add them to the bowl along with the chopped red onion and celery. Season with salt and pepper.
  3. Gently fold all the ingredients together until well combined. Adjust seasoning if necessary. Garnish with fresh dill or parsley if using.
