Ingredients

  • 2 tablespoons butter plus extra for greasing the pan, unsalted
  • 4 egg separated, large
  • 2 tablespoons all-purpose flour
  • 1 cup milk skim
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and lightly grease a 9-inch round baking dish with some butter.
  2. In a mixing bowl, beat the egg whites until soft peaks form, then set aside.
  3. Melt the 2 tablespoons of butter in a saucepan over medium heat, whisk in flour to create a roux, and cook until it begins to brown.
  4. Reduce heat to low, gradually add milk while whisking to prevent lumps, then increase heat to medium and whisk until thickened.
  5. Remove from heat, season with salt and pepper, and quickly whisk in the egg yolks.
  6. Gently fold the milk and yolk mixture into the beaten egg whites, being careful not to deflate the whites.
  7. Pour the mixture into the prepared baking dish and bake until the top is lightly browned, about 20-25 minutes. Serve immediately.
