Egg Stir-Fry

Ingredients
- 4 egg large
- salt to taste
- black pepper to taste
- 1 tablespoon vegetable oil divided
- 1 onion thinly sliced, small
- 1/2 bell pepper sliced, large
- 3 garlic minced, cloves
- 1 tablespoon soy sauce light
- 1 green onion chopped (plus more for garnish)
Instructions
- Crack eggs into a bowl. Add a pinch of salt and pepper, then beat until combined.
- Heat 1/2 tablespoon of oil in a large skillet over medium-high heat. Add beaten eggs and stir until softly scrambled.
- Remove the eggs from the pan and set them aside. In the same skillet, add the remaining oil and sauté the onion, bell pepper, and garlic for about 2-3 minutes until just softened.
- Return the eggs to the skillet and drizzle the light soy sauce over the mixture. Stir-fry everything together for another 1-2 minutes until well combined.
- Incorporate green onion, season with salt and pepper to taste, and serve right away, garnished with more green onions.
