Egg Tortilla

Ingredients

  • 1 teaspoon unsalted butter
  • 1 large egg
  • pinch salt and pepper
  • 1 ounce sharp, white cheddar cheese, grated
  • 1 inch whole-wheat tortilla

Instructions

  1. Heat a skillet over medium heat and melt the butter. Crack the egg into the skillet, season with salt and pepper, and cook until the whites are set.
  2. Flip the egg gently, top with half of the cheese, and place the tortilla on top. Cook for 1 minute.
  3. Flip everything so the tortilla is on the bottom, add the remaining cheese, cover, and cook for another minute. Serve hot.
