Egg White Bites
Egg White Bites are loaded with cheese, bacon, and green onion for the ultimate on the go breakfast!

Ingredients
- 2 ½ cups liquid egg whites
- 2/3 cup cottage cheese ( I use 2%)
- 1/2 cup cooked, chopped bacon
- 1/4 cup chopped green onion
- 1/2 cup shredded Colby-Jack cheese
- salt and pepper, to taste
Instructions
- Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with non-stick spray. Set aside.
- Pour the egg whites into a large mixing bowl. Whisk in the cottage cheese, bacon, and green onion. Divide the egg mixture evenly among the 12 prepared muffin cups.
- Sprinkle the top of each egg cup with salt and pepper. Sprinkle the cheese evenly over all the tops.
- Bake uncovered for 25 minutes or until the eggs are set. Carefully remove the pan from the oven. Let the egg bites rest and cool slightly. Serve warm and enjoy!
